Preparing Purslane for Eating
Freshly harvested purslane needs some simple preparation before it’s ready to enjoy.
- Wash thoroughly: Rinse under cool water to remove dirt and dust.
- Dry gently: Pat dry with a clean towel or use a salad spinner.
- Trim: Remove any tough, thick stems.
- Use immediately or store: Purslane is best eaten fresh, but it can also be stored in the refrigerator.
How to Store Purslane
To keep purslane fresh:
- Wrap it in a damp paper towel and place it in a plastic bag or container.
- Store in the refrigerator for up to 3–4 days.
- For longer storage, blanch it briefly in boiling water, then freeze.
